The different cooking techniques
Baking & Grilling
To bake and grill, it is important to bring the Kamado to a high temperature, around 175 to 230 degrees Celsius. The ventilation vents should be fully or partially open, and the grill grate can be placed directly above the fire. The grate should be well-heated before placing anything on it.
Steaming & Smoking
For steaming and smoking food, the temperature in the Kamado should be between 60 and 150 degrees Celsius. The fire bowl should be filled with coals up to about halfway. Once the charcoal is at the right temperature, you can sprinkle wood chips over it. Close the lower ventilation disc and the daisy wheel completely. This way, you can easily make smoked salmon or smoked chicken. Make sure to use a thermometer in the meat to reach the correct temperature.
Slow cooking
With the slow cooking technique, the temperatures in the Kamado remain relatively low. The meal will cook slowly, allowing the flavors to develop optimally. For slow cooking, fill the Kamado's fire bowl up to 2/3 of the rim with charcoal. The lower vent should be slightly open, and the daisy wheel should be almost fully open. To avoid direct heat on your dish, you can use a ceramic plate between the fire and the grill grate.
Oven
You can also make pizzas with a Kamado. For this, you will need a pizza stone, grill grate, and ceramic plate. Baking in a ceramic barbecue is done at a minimum of 230 degrees Celsius. To achieve this, fill the fire bowl 2/3 full with charcoal. Once the charcoal is burning, you can place the ceramic plate, the grill grate, and then the pizza stone on the grill grate.
