Useful to know 

- Like other cast iron products, the plancha must first be seasoned. After 8 to 10 firings, a natural non-stick coating develops. Allow an additional 30 minutes or so for this before cooking. 
- Preferably use kiln-dried hardwoods such as oak or maple. For ideal heat, use 4 to 6 medium-sized, split logs that you let burn to a layer of hot coals. 
- Make sure the flames don't get too high. You get the best results with a low, even layer of coals. 
- Clean the plancha properly. Start by wiping away grease and food residue while the plate is still hot, then rinse the plate with hot water. Do not use soap and never soak or submerge the plate! Dry the plancha thoroughly and rub it with a thin layer of oil before storing it.
